Both are raw, unfiltered, and straight from our hives at Stafford Hill Farms — but Sourwood and Wildflower honey are very different in flavor, character, and best uses. Here's how to choose the right one (or both).
Sourwood Honey
Sourwood honey is considered one of the finest honeys in the world, and it's native to the Appalachian region — right in our backyard here in Western North Carolina. Our bees forage exclusively on the blooms of the Sourwood tree (Oxydendrum arboreum) during a short summer window, producing a honey that's truly one-of-a-kind.
- Flavor: Light, delicate, and floral with hints of anise and a buttery finish. Exceptionally smooth with very little aftertaste.
- Color: Light amber to golden
- Texture: Silky and slow to crystallize
- Best for: Drizzling over cheese, biscuits, yogurt, and fruit. Sweetening tea. Eating straight off the spoon. Gifting.
- Availability: Seasonal and limited — Sourwood blooms for only a few weeks each summer.

Wildflower Honey
Wildflower honey is a true expression of the land — a blend of whatever is blooming across our fields and surrounding countryside throughout the season. Every batch is slightly different, reflecting the diversity of our local flora.
- Flavor: Bold, complex, and robust with earthy, floral, and sometimes fruity notes. Richer and more assertive than Sourwood.
- Color: Medium to dark amber, varies by season
- Texture: Thicker, crystallizes more readily
- Best for: Marinades, glazes, salad dressings, baking, oatmeal, and anywhere you want honey flavor to stand out.
- Availability: Available throughout the season
